Introduction to Food and Nutrition
Food is one of the basic necessities of life. It provides the energy needed for daily activities, supports growth, repairs damaged tissues, and protects the body against diseases. Different foods contain different nutrients, each performing a unique function in keeping our body healthy.
Food is obtained from both plants and animals. Grains, fruits, vegetables, pulses, and edible oils come from plants, while milk, eggs, meat, fish, and honey are obtained from animals. A healthy diet includes a variety of foods from both sources to meet the body’s nutritional needs.
Food Sources and Eating Habits
Different living organisms have different food habits. Herbivores eat only plants, carnivores eat only animals, omnivores eat both plants and animals, and insectivores mainly feed on insects.
Humans also consume different edible parts of plants such as roots, stems, leaves, flowers, fruits, and seeds. Understanding food sources helps us appreciate biodiversity and the importance of agriculture.
Nutrients and Their Functions
Food contains several essential nutrients that perform different functions in the body. Carbohydrates and fats provide energy for daily activities, while proteins help in growth and repair of body tissues.

A balanced diet contains carbohydrates, proteins, fats, vitamins, minerals, roughage, and water in the right proportions. Eating a balanced diet helps maintain good health, supports growth, and prevents deficiency diseases.
Fresh fruits, vegetables, pulses, cereals, milk, and nuts should be included in the daily diet. Excessive consumption of junk food may lead to obesity and poor health because it contains high calories but very few essential nutrients.
Proper cooking methods, such as washing vegetables before cutting and avoiding excessive boiling, help preserve important nutrients.
Importance of Good Nutrition

परिचय
भोजन जीवन की मूलभूत आवश्यकताओं में से एक है। यह हमें ऊर्जा प्रदान करता है, शरीर की वृद्धि में सहायता करता है, क्षतिग्रस्त ऊतकों की मरम्मत करता है तथा हमें अनेक रोगों से बचाता है। विभिन्न खाद्य पदार्थों में अलग-अलग पोषक तत्व पाए जाते हैं, जो शरीर में अलग-अलग कार्य करते हैं।
भोजन हमें पौधों और पशुओं दोनों से प्राप्त होता है। अनाज, दालें, फल, सब्जियाँ और खाद्य तेल पौधों से मिलते हैं, जबकि दूध, अंडे, मछली, मांस और शहद पशुओं से प्राप्त होते हैं। स्वस्थ रहने के लिए दोनों प्रकार के खाद्य पदार्थों का संतुलित सेवन आवश्यक है।
भोजन के स्रोत और भोजन की आदतें
विभिन्न जीवों की भोजन संबंधी आदतें अलग-अलग होती हैं। शाकाहारी केवल पौधों का भोजन करते हैं, मांसाहारी अन्य जीवों का भोजन करते हैं, सर्वाहारी पौधों और पशुओं दोनों का भोजन करते हैं, जबकि कीटभक्षी मुख्य रूप से कीटों पर निर्भर रहते हैं।
मनुष्य पौधों के विभिन्न भागों जैसे जड़, तना, पत्ती, फूल, फल और बीज का भी भोजन के रूप में उपयोग करता है।
पोषक तत्व और उनके कार्य
भोजन में अनेक आवश्यक पोषक तत्व पाए जाते हैं। कार्बोहाइड्रेट और वसा शरीर को ऊर्जा प्रदान करते हैं, जबकि प्रोटीन शरीर की वृद्धि तथा क्षतिग्रस्त ऊतकों की मरम्मत करते हैं।
विटामिन शरीर को रोगों से बचाते हैं, खनिज हड्डियों, दाँतों और रक्त के निर्माण में सहायता करते हैं। रेशेदार पदार्थ (रफेज) पाचन तंत्र को स्वस्थ रखते हैं तथा जल शरीर का तापमान नियंत्रित करने, पोषक तत्वों का परिवहन करने और अपशिष्ट पदार्थों को बाहर निकालने में सहायता करता है।
विटामिन, खनिज और कमी से होने वाले रोग
प्रत्येक विटामिन का शरीर में विशेष कार्य होता है। विटामिन A आँखों के लिए, विटामिन B तंत्रिका तंत्र के लिए, विटामिन C रोग प्रतिरोधक क्षमता के लिए, विटामिन D हड्डियों के लिए, विटामिन E त्वचा और प्रजनन स्वास्थ्य के लिए तथा विटामिन K रक्त के थक्के बनने में सहायता करता है।
आयरन, कैल्शियम, आयोडीन और सोडियम जैसे खनिज भी शरीर के लिए अत्यंत आवश्यक हैं। इनकी कमी से एनीमिया, घेंघा, कमजोर हड्डियाँ और अन्य स्वास्थ्य समस्याएँ उत्पन्न हो सकती हैं।
विद्यार्थी भोजन में कार्बोहाइड्रेट, प्रोटीन और वसा की पहचान करने वाले सरल प्रयोगों के बारे में भी सीखते हैं।
संतुलित आहार और स्वस्थ भोजन
संतुलित आहार वह आहार है जिसमें सभी आवश्यक पोषक तत्व, रेशेदार पदार्थ और जल उचित मात्रा में उपस्थित हों। संतुलित भोजन शरीर की वृद्धि, रोगों से सुरक्षा तथा अच्छे स्वास्थ्य के लिए आवश्यक है।
प्रतिदिन फल, सब्जियाँ, दालें, अनाज, दूध और मेवों का सेवन करना चाहिए। जंक फूड का अधिक सेवन मोटापा और अनेक स्वास्थ्य समस्याओं का कारण बन सकता है क्योंकि इसमें आवश्यक पोषक तत्वों की मात्रा बहुत कम होती है।
सब्जियों को काटने से पहले धोना तथा भोजन को अधिक देर तक न उबालना पोषक तत्वों को सुरक्षित रखने में सहायता करता है।
अच्छे पोषण का महत्व
अच्छा पोषण शरीर को स्वस्थ रखता है, रोग प्रतिरोधक क्षमता बढ़ाता है, शारीरिक और मानसिक विकास में सहायता करता है तथा दैनिक कार्यों के लिए पर्याप्त ऊर्जा प्रदान करता है। बचपन से स्वस्थ भोजन की आदतें अपनाना जीवनभर अच्छे स्वास्थ्य का आधार बनता है।
